Yummy lunch/dinner salad idea in less than 20 minutes!

Hey!
After a long and beautiful bike ride on the boardwalk today with Kyle, we both worked up an appetite. We had an amazing salad and I want to share it with you 😋

Ingredients:
•Trader Joe’s organic power to the greens mix (organic baby kale, organic baby chard and organic baby spinach)
•1/4 cucumbers (sliced thin)
•1/4-1/3 yellow bell pepper
•1/8 cup sliced onions
•1 celery stalk
•1/4 cup black beans
•1/2 cup quinoa
•1/2 avocado cut in small pieces
•1 large carrot
•1 hand full of cherry tomatoes (I like the organic mixed medley from trader joes)

Dressing:
•2Tbs EVOO
•1Tbs balsamic vinegar
•1-1.5tsp maple syrup (sub agave)
•2tsp Dijon mustard
• pinch or pink Himalayan sea salt
• pinch black pepper
•1 or 2 small cloves garlic finely chopped or pressed in garlic press
BLEND IN BLENDER OR WHISK To emulsify

Add all ingredients in a bowl and mix in
Dressing. Save extra dressing for later (saves for about a week)
